Lemon Tahini Dressing

I love Tahini it's so versatile and when used as a dressing it can instantly jazz up salads, it is especially good with kale and roasted vegetables.  It gives a good depth of flavour to vegetables and grains and because of its creamy texture I think it feels rather naughty!


1 garlic clove
60g Tahini
zest of one lemon
50ml of lemon juice
2 tablespoons of olive oil
2 tablespoons of warm water
pinch of a good sea salt


Place all of the ingredients into a food processor and blend until smooth.

I mean it couldn't be easier to whip up a lovely little dressing.
